Hue

The old capital keeps its rituals in the kitchen as much as in the citadel. Hue cooked for a court, and the standard survived it: dishes measured in gestures rather than portions, recipes carried in families rather than books, garden houses along the Perfume River that still receive guests the way they received mandarins. We are coming for the discipline underneath the ceremony — cooks who answer to a standard set by an audience that no longer arrives. Filming is scheduled for Season One.
